Recipe of the Week: Buffalo Bites

This Sunday is the Super Bowl and that means family and friends gathering together to watch the game, make fun of the commercials, and playing a little touch football during half-time. Oh, and TONS of yummy snack foods and appetizers! This is a great game day recipe that takes buffalo chicken wings and transforms them into a great appetizer that is boneless, healthier, and a lot less messy than the traditional wing.

Buffalo Bites
Adapted from The Meatball Shop

2 pounds ground chicken or turkey
½ cup wing sauce*, plus extra for serving
2 eggs, slightly scrambled
1 cup celery, finely diced
1 ¾ cups breadcrumbs
2 teaspoons kosher salt
2 teaspoons parsley
1 teaspoon garlic powder
blue cheese dressing
celery and carrot sticks

Pre-heat oven to 425 degrees. Grease mini-muffin tin with olive oil.

In large bowl, mix meat, wing sauce, and the rest of the ingredients through garlic powder with your hands until well mixed.

Spoon out meat mixture, about 2 tablespoons per ball, and then roll into ball. Place meatballs in mini-muffin tin. The mini-muffin tin keeps the meatballs shape and helps with browning.

Bake for 15 minutes, or until golden brown. Makes approx. 48 meatballs.

Serve warm with blue cheese dressing, extra wing sauce, and celery and carrot sticks.

*We used Louisiana Wing Sauce, but you can use your family’s favorite.

    OUTSTANDING!!!! I made these “buffalo Balls” for my superbowl party and they were a huge hit!!I made them ahead of time and it wasn’t easy keeping the kids out of them once they had a taste. Everyone wanted the recipe which was very simple to make and keep warm while we enjoyed the game.

      Glad you enjoyed the recipe! They freeze great too, if you ever have any leftover.
