I love canning. The chopping, cooking, jarring, and most of all the eating! I am always happy to take any extra jars of garden goodness off my family and friends hands. It always amazes me how many vegetables and fruits can be canned and in so many ways. Once the harvest starts rolling in canning is an awesome way to preserve your entire summer crop to be enjoyed throughout the year! It is also a great activity. My family always cans in groups. We combine crops and spend the day in the kitchen cooking, laughing, telling stories, and yes eating. This year one of my gardening goals is to preserve more of my vegetables and fruits with canning. A waterbath with canning rack will hold your jar safely while boiling.
A wide mouth funnel will make filling your jars quick and mess free. While a jar lifter will help you securely lift out hot jars while sparing you fingers.
A few helpful tools are a food mill and a mandoline slicer. Food mills are great for removing tomato seeds and skin and pureeing cooked vegetables and fruit for smooth purees. A mandoline is the perfect tool to quickly slice cucumbers and more when pickling, dehydrating or just making a salad!
